Buttermilk Pancakes

Ingredients:
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 large egg, lightly beaten
1 cup buttermilk
Vegetable oil

Directions:
Preheat oven to 200° F. Whisk together flour, baking soda, salt, egg, and buttermilk until smooth. Heat a griddle or a large skillet over medium heat (until drops of water burn up quickly on its surface). Brush with oil. Using a 1/4-cup measure, pour batter onto griddle and cook, turning over once, until golden-brown.

If you notice a hole in the upper left-hand corner of your Farmers' Almanac, don't return it to the store! That hole isn't a defect; it's a part of history. Starting with the first edition of the Farmers' Almanac in 1818, readers used to nail holes into the corners to hang it up in their homes, barns, and outhouses (to provide both reading material and toilet paper).
