Maple Apple Chicken

Maple Apple Chicken

Ingredients:
4 chicken breasts
1 apple, peeled, cored, chopped
1 cup apple juice
1/2 cup maple syrup
1 teaspoon thyme

Directions:
Pound chicken breasts to 1/4 inch thickness. Simmer the chopped apple, apple juice and syrup until apple is broken down and liquid is reduced by half, about 10-12 minutes. Line broiler pan with foil, place the chicken breasts on foil and brush with the syrup mixture. Broil for approximately 4 minutes. Turn chicken breasts over, brush with syrup mixture and broil another 4-5 minutes, until cooked through.

The above recipe is like mine although I have not tried maple syrup, which I will. I cook my chicken in a large sauce pan with a lid and add all the ingredients listed above (minus the maple syrup) with the addition of walnuts and about a teaspoon of lemon juice. I cook it for about 20 minutes in a covered pan or the until the chicken is done..

If you notice a hole in the upper left-hand corner of your Farmers' Almanac, don't return it to the store! That hole isn't a defect; it's a part of history. Starting with the first edition of the Farmers' Almanac in 1818, readers used to nail holes into the corners to hang it up in their homes, barns, and outhouses (to provide both reading material and toilet paper).
