Peanut Butter Eggs

Peanut Butter Eggs

Ingredients:
2 eggs, beaten
1/8 tsp. salt
2 cups peanut butter
5 cups powdered sugar
1 tsp. vanilla
1 1.55-oz. chocolate bar
1 6-oz. package chocolate chips

Directions:
In a large mixing bowl, combine the eggs, salt, peanut butter, sugar and vanilla until it takes on a doughy texture. Form the peanut butter dough into egg shapes, using about two tablespoons of dough for each “egg.” In a double boiler, melt the chocolate bar and chocolate chips. Using a large slatted spoon, dip the egg shapes into chocolate mixture. Place on waxed paper and allow to cool.

Not a good idea with non-cooked eggs, But many Grocery and Craft store and some Walmarts carry an egg powder for recipes like this and very safe. So check out your local Grocery or Craft store where they have cake decorating items , then you can make all kinds of Candies. Enjoy ; D

Hi Dixie,
Raw or undercooked eggs are a part of many popular dishes, but, yes, salmonella is always a concern. We covered that in an article last fall: http://www.farmersalmanac.com/food/2010/11/29/raw-eggs-is-that-safe/

In the end, it’s up to you to decide what your comfort level is concerning raw eggs.

Although this recipe might sound good, isn’t it somewhat risky to consume raw egg in this recipe? Even though the egg is mixed with other ingredients and then dipped in melted chocolate, that does not cook the egg to an appropriate temperature to be deemed safe.

If you notice a hole in the upper left-hand corner of your Farmers' Almanac, don't return it to the store! That hole isn't a defect; it's a part of history. Starting with the first edition of the Farmers' Almanac in 1818, readers used to nail holes into the corners to hang it up in their homes, barns, and outhouses (to provide both reading material and toilet paper).
