Quinoa Delight

1 cup quinoa
2 cups water
2 cups apple juice
1 cup raisins
2 tablespoons lemon juice
1 teaspoon ground cinnamon, or to taste
2 teaspoons vanilla extract
Salt to taste

Wash the quinoa, if necessary, then place it in a medium saucepan with water. Bring to a boil over high heat, then cover the pan with a lid, lower heat, and allow to simmer about 15 minutes until all the water is absorbed and quinoa is tender. Mix in apple juice, raisins, lemon juice, cinnamon, and salt. Cover pan and allow to simmer for 15 minutes longer. Stir in vanilla extract. Serve warm.

My son who is 18months old loves Qiunoa. We had friends introduce it to us and its good. We use it with stir fry instead of rice.

I fix my Quinoa plain in the beginning of the week, and keep it covered in the fridge. I am a Celiac, so this replaces oatmeal for me. I take one cup of cold Quinoa, 1 tblsp of organic peanutbutter and a little water to thin, microwave for 2 minutes. Add cut up fruit, like bananas and a little brown sugar, and YUM! Breakfast!

If you notice a hole in the upper left-hand corner of your Farmers' Almanac, don't return it to the store! That hole isn't a defect; it's a part of history. Starting with the first edition of the Farmers' Almanac in 1818, readers used to nail holes into the corners to hang it up in their homes, barns, and outhouses (to provide both reading material and toilet paper). In 1910, the Almanac's publishers began pre-drilling holes in the corners to make it even easier for readers to keep all of that invaluable information (and paper) handy.
