Sauerkraut Surprise Cake

1/2 cup butter or margarine

1 1/2 cups white sugar

3 eggs

1 tsp. vanilla extract

2 cups all purpose flour

1 tsp. baking powder

1 tsp. baking soda

1/2 tsp. salt

1/2 cup unsweetened cocoa powder

1 cup water

1 cup sauerkraut, very finely chopped

Grease and flour one 13×9 cake pan. In a large mixing bowl, cream the butter or margarine and sugar until light. Beat eggs, one at a time, then add vanilla. Sift together flour, baking powder, baking soda, salt, and cocoa powder. Add to creamed mixture, alternating with water, and beating after each addition. Stir in sauerkraut. Pour batter into prepared pan. Bake at 350 for 35 to 40 minutes. Let cake cool in pan. Frost with sour cream chocolate frosting. Cut into squares to serve.

If you notice a hole in the upper left-hand corner of your Farmers' Almanac, don't return it to the store! That hole isn't a defect; it's a part of history. Starting with the first edition of the Farmers' Almanac in 1818, readers used to nail holes into the corners to hang it up in their homes, barns, and outhouses (to provide both reading material and toilet paper). In 1910, the Almanac's publishers began pre-drilling holes in the corners to make it even easier for readers to keep all of that invaluable information (and paper) handy.
