Haiti Relief

In one month, I will be joining a group of friends from Lewiston on a mission that will bring me to a school and orphanage outside of Port au Prince, Haiti. Members of the South Lewiston Baptist Church have been working thought Partners with Haiti to build a school for the past 5 years. The earthquake destroyed the top 2 floors of the school and demolished the pastor’s home. So, this will be a rebuild. I was never “blessed” with any mechanical aptitude. But, I don’t shy away from hard physical work. Even months after the quake, I know I will be moved by the experience. I will share more as I get closer to departure.

Last night I attended a spaghetti dinner to raise money for the trip. As with most small churches, many people are incredible cooks and bakers. There was a “pie auction” which raised almost $1,000. I managed to scoff up a Dutch Apple Pie including the recipe. Since we associate recipes with the Farmers’ Almanac, I am passing this one along, although I don’t have the donor’s name. It is awesome. Enjoy.

Dutch Apple Pie

2 cups flour
1 cup brown sugar
3/4 cup butter, melted
1/2 cup quick-cooking oats

Filling:

2/3 cup sugar
3 tablespoons cornstarch
1 π cup water
3 cups diced, peeled apples
1 teaspoon vanilla

Combine the first four ingredients, then set aside 1 cup for topping. Press remaining crumb mixture into an ungreased 9 inch pie plate. For filling, combiner sugar, cornstarch and water in a saucepan until smooth, bring to a boil. Cook and stir 1 minute or until thickened. Remove from heat. Stir in apples and vanilla. Pour into crust, top with reserved crumb mixture. Bake at 350 degrees for 40 — 45 minutes or until crust is golden brown.

If you notice a hole in the upper left-hand corner of your Farmers' Almanac, don't return it to the store! That hole isn't a defect; it's a part of history. Starting with the first edition of the Farmers' Almanac in 1818, readers used to nail holes into the corners to hang it up in their homes, barns, and outhouses (to provide both reading material and toilet paper). In 1910, the Almanac's publishers began pre-drilling holes in the corners to make it even easier for readers to keep all of that invaluable information (and paper) handy.
